I found this recipe in a paperback book in 1968 and have enjoyed it many, many, many times since. It's so good you never get tired of it! When it starts cooking... Ah-h-h-h-h-h! The aroma is SUPER!
1 chicken, cut up ...1 large bell pepper ...1 large onion ...1 large (28 ounce) can peeled whole tomatoes*...2 eggs ...Italian bread crumbs ...
Orange Butter
1 medium orange, juiced
2 tablespoons orange rind
3 eggs
1/2 cup butter
1/2 cup granulated sugar
Juice and grate rind of orange. Mix with eggs. Blend with remaining ingredients in top of double boiler. Stir until sugar is dissolved. Continue heating; takes time until butter is thickened. Spoon or pour into jars. Seal lids.
Store in the refrigerator.
