  1. This is the chili that was always cooked at the LBJ Ranch in Texas. It was a favorite of Lyndon B. Johnson. He ate this with saltine crackers and a glass of ice cold milk.

    4 pounds coarsely-ground beef...1 large onion, chopped...1 teaspoon Mexican oregano...1 teaspoon ground cumin seeds...6 teaspoons red chili powder...2 (16 ounce) cans tomatoes...Salt, to taste...

    Crust...24 (5 x 2 1/2-inch) graham crackers...1/2 cup pure maple syrup (preferably Grade B)

    In a food processor finely grind graham crackers (you will have about 3 1/2 cups). Melt butter. In a large bowl stir together graham cracker crumbs, butter, and maple syrup and press evenly into bottom and up side of a 10-inch springform pan. Wrap bottom and side of pan with 2 layers of heavy-duty foil to avoid leakage.

    While cake is baking, prepare toppings.

    First Topping...1 cup milk...1 cup granulated sugar...1 (14 ounce) package coconut

    Heat until dissolved, then add coconut.

    Second Topping...1 1/2 cups granulated sugar...1/2 cup milk...1/2 cup (1 stick) butter...
