  1. 3 cups all-purpose flour ...1/2 teaspoon salt ...1 teaspoon vanilla extract

    Cut butter into bits.

    In a bowl with a pastry blender or in a food processor blend or pulse flour, confectioners’ sugar and salt until combined well and add butter, blending or pulsing until mixture resembles coarse meal.

    In a small bowl whisk together yolks, ice water and vanilla extract until combined well, then add to flour mixture, tossing with a fork or pulsing until incorporated. Form dough into a ball and divide into 2 pieces. Form each piece into a ball and flatten to form disks. Chill disks, wrapped separately in a plastic wrap, for at least 1 hour and up to 1 week.

    Preheat oven to 400 degrees F.

    Form 1 dough disk into twenty-four 1-inch balls, keeping remaining disk wrapped and chilled. Press dough balls into bottoms and up sides of twenty-four 1/8-cup mini-muffin cups (about 1 3/4 inches across top and 1 inch deep). Trim any overhang with a knife and prick bottoms of shells with a wooden pick. Chill shells 15 minutes, or until firm.

    Bake shells in middle of oven 12 minutes, or until golden, and cool in cups on racks.

    Dissolve the yeast in warm water. To the scalded milk add the butter, sugar, salt, a little nutmeg and lemon. When lukewarm, add 1 beaten egg or the beaten yolks of 2 eggs; stir in the yeast and only enough flour to knead. Knead dough until smooth and elastic. Cover tightly and let rise until doubled in bulk. Cut dough down, form into desired shape and bake in a moderately hot oven (375 degrees F) until browned.

    Plain Coffee Kuchen

    Make Plain Kuchen Dough, above, or Rich or Sweet Kuchen Dough, below. After first rising, spread 1/2 inch thick in shallow buttered pan. Cover and let rise again. Melt 2 tablespoons butter, spread over dough, sprinkle with sugar, cinnamon and chopped nuts or with Crumb Topping (Streusel). Bake 15 to 20 minutes in a moderate oven, 350 degrees F.

    Rich Kuchen Dough

    1 package active dry yeast...4 to 5 1/2 cups flour

    Dissolve yeast in warm water. Cream butter and sugar; add eggs, one at a time, salt, lemon rind, the dissolved yeast, warm milk and the flour. Knead until smooth and elastic. Cover and let rise in a warm place, until doubled in bulk. Toss on board, form into any desired shape; let rise again and bake in a moderately hot oven (375 degrees F) until browned.

    Sweet Kuchen Dough

    1 package active dry yeast...1 cup flour

    Dissolve yeast in warm water. Add milk and flour. Mix well and let rise in warm place.

  3. 4 tablespoons granulated sugar...Beat together 1 cup milk and 1 egg. Stir in 1 1/2 cups Master Baking Mix. Bake on hot griddle or waffle iron. For lighter waffles, separate egg; add yolk with milk. Beat egg white until stiff, and fold into batter just before baking. Increase milk for thinner batter, if desired.

    Cornbread...Combine 2 cups Master Baking Mix, 1 cup oatmeal, 3/4 cup sugar, 1 teaspoon baking powder, 1/4 teaspoon salt and 1/2 cup raisins. Beat 1 egg and 1 1/4 cups milk together. Add to dry mixture and beat hard for 30 seconds. Pour into a greased, 1 1/2-quart casserole. Bake at 325 degrees F for 1 hour and 10 minutes. Turn out onto rack to cool. When cool, wrap and store for a day for best slicing.

    Onion-Cheese Bread...To 1 cup Master Baking Mix add 1 tablespoon sugar. Add enough water to 1 beaten egg yolk to make 1/3 cup. Add to mix to make a soft dough. Knead lightly. Roll 1/4-inch thick. Cut; place on a baking sheet. Brush with melted butter. Bake for 12 to 15 minutes at 425 degrees F. Put fruit between and on top of two biscuits. Serves 6.
